Simple Slow Cooker/ Instant Pot Cabbage and Lentil Soup
This was so easy to make and it only took about 15 minutes in my Instant Pot! This can be made in an Instant Pot, Crock Pot, or in a traditional stock pot! SO simple!
Ingredients:
1/2 head of cabbage (chopped)
1/2 bag of carrots (peeled and chopped)
3-4 celery stalks (chopped)
1 whole onion (diced)
1 Tablespoon black pepper
a few dashes sea salt
2 Tablespoons Italian Seasoning
8 cups Organic, Low Sodium Chicken Broth
1 cup dry Lentils
**You can also add diced tomatoes, and variety of bell peppers, potatoes, frozen peas, and the list goes on... This is one soup you really cannot mess up!
Throw it all in whatever you are cooking it in and go!
In the Instant Pot- I cooked on high pressure, "Soup" button setting for 15 minutes then did Quick Release. (I think it was done at around 10 minutes, but I let the clock finish since I was cleaning... so if you like firmer cabbage do not cook for the entire 15 minutes)
In the Crock Pot- I would say for this one Low for 6 hours or High for 4 hours.
In the stock pot- Cook until Lentils are soft. With this option you may want to soak lentils before if you are wanting a faster cook time
