Taco Chicken Bowl- (crock pot recipe)
Add 1 ½ lbs chicken
breasts, 1 (16 oz) jar of salsa, 1 (15oz) can of drained black beans, ½ to 1
can of low/no sodium corn, 1 ½ tsp cumin, 1 ½ tsp minced garlic, ½ tsp oregano,
¼ tsp cayenne pepper, and salt and pepper to taste to your slow cooker. Cook on high 4 hours or low 8 hours. Near the end of the cooking time prepare 2
cups brown rice as package directs. This
should make about 6 servings.
(optional-- depending on how "healthy" you want to be you can also add a dollop of low/fat free sour cream and a pinch of low fat cheese to the top)
