WELL, I thought I would write about budget friendly meals for the whole family to help everyone get back on the healthy train!
The first one is a weekly go-to in our home for something quick and easy!
Meal #1: Gluten-free turkey spaghetti
What I use is:
1 pack of gluten-free brown rice spaghetti (about $2)
1 jar of low sodium (or organic/natural) pasta sauce (about $2)
1 lb lean ground turkey (about $3)
Total cost= $7.00
This will make about 6-8 servings, so, it feeds our family of 4 very well and there is always enough for my husband to take for lunch the next day AND for my daughters to have the next day for lunch as well!
Meal #2: Chicken taco bowl bake
I have introduced this meal before as a healthy crock pot meal BUT you can also bake it!
What I use is:
1.5 lbs of chicken breasts (about $4)
1 can black beans ($1)
1/2 jar salsa ($2)
1/2 can corn ($1)
1/2 packet of Mrs. Dash sodium free taco seasoning ($1)
1.5-2 cups brown rice (if you buy in a larger bag this should be less than $.50)
Total cost= $9.50
In a 9x13 glass pan layer chicken, salsa, beans, corn, and then sprinkle seasoning on top. Cover with foil and bake an 350 for about 30-45 minutes (varies based on your oven)
Cook rice separately and serve with the chicken taco bowl bake!
This makes about 6 servings so once again we ALWAYS have a few meals left over.
Meal #3: Grilled chicken, baked sweet potatoes, and squash
This is an all on the grill SUMMER meal!
What I use is:
1-2 pounds of chicken breasts (about $4-5)
4 medium sweet potatoes (about $3)
2-3 medium summer squash sliced (about $3)
Total cost $11.00
And YEP you guessed it we always have a few meals left over for the next day!
So first things first wash you sweet potatoes, then poke a bunch of holes in them with a fork, you will need 4 pieces of foil now, one for each potato. Next add about a 1/2 teaspoon of smart balance and a super small sprinkle of brown sugar on top of each potato and seal the foil around them. You will want to put these on the grill about 10 or so minutes BEFORE you put the chicken on!
You will also need 2 large pieces of foil for the squash. after you have washed and sliced the squash place it all on 1 piece of foil. drizzle a bit of olive oil over the squash and sprinkle a little sea salt over all. Place the second piece of foil on top and make sure you seal the edges of the foil shut really good! Now put this on the grill.
Last you want to add the chicken. You don't NEED a sauce to grill chicken in but we have used fat free italian dressing before and it is yummy if you aren't a fan of plain chicken. Now put your chicken on the grill!
